The Méthode Cap Classiqe (MCC) is South Africa's answer to French champagne. The methods are identical: bottle fermentation, long yeast storage and elaborate manual work. In the production of our (58%) Pinot Noir and (42%) Chardonnay Brut Rosé, we use the saignée method to preserve the colour. The juice is "drawn off" (saignée) from the press when it has gained the right amount of colour. The base wines are then cool fermented in steel tanks to preserve their delicate fruit flavours, followed by 48 months of bottle ageing on the lees. Notes of strawberries, black cherries and raspberries literally leap from the glass, complemented by subtle hints of mint and a hint of rosewater in the background to this gorgeous berry bouquet. The mousse is fine and soft, with a rich, generous attack that develops nicely in the mouth to a clean, dry finish. The enticing balance and generous fruit make this a great aperitif and food wine.
