The grapes are harvested in the early hours of the morning, when the richness of the fruit is sharply balanced with the lively natural acidity so typical of this wine and the cool aromas of delicate gooseberries and limes, joined by floral notes. The careful treatment in the vineyard continues in the cellar, where dry ice and refrigeration are used to preserve the delicate flavors of Sauvignon Blanc. Notes of asparagus and ripe fruit flavors are underscored on the nose by the smokiness characteristic of Sauvignon Blanc. The palate is rich but finishes clean and finely textured. Iced, this is the perfect wine for seafood dishes or anything with an underlying richness that just begs to be enlivened by the clean, dry acidity of the Sauvignon. A real treat!
